Keto Garlic Butter Shrimp with Zucchini Noodles

This keto-friendly shrimp dish is quick, easy, and packed with flavor. The buttery garlic sauce combined with zucchini noodles makes it a delicious low-carb meal that’s ready in under 20 minutes!

Ingredients:

  • For the Shrimp:
    • 1 lb (450g) shrimp, peeled and deveined
    • 3 tbsp unsalted butter
    • 4 cloves garlic, minced
    • 1 tbsp olive oil
    • 1/4 tsp red pepper flakes (optional)
    • Salt and pepper to taste
    • 2 tbsp fresh lemon juice
    • 2 tbsp chopped parsley (for garnish)
  • For the Zucchini Noodles:
    • 2 medium zucchinis, spiralized into noodles (or use a vegetable peeler to make thin strips)
    • 1 tbsp olive oil
    • Salt and pepper to taste

Instructions:

  1. Prepare the Zucchini Noodles:
    • Heat 1 tbsp olive oil in a large skillet over medium heat.
    • Add the zucchini noodles (zoodles) to the pan and cook for 2-3 minutes, tossing occasionally until they are slightly tender but still firm (al dente).
    • Season with salt and pepper, then remove from the pan and set aside.
  2. Cook the Shrimp:
    • In the same skillet, heat the olive oil and 2 tbsp of butter over medium heat.
    • Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
    • Add the shrimp to the pan, season with salt and pepper, and cook for 2-3 minutes per side until pink and cooked through.
    • Once the shrimp are cooked, add the remaining 1 tbsp of butter and the fresh lemon juice to the pan. Stir to combine and coat the shrimp in the buttery sauce.
  3. Assemble the Dish:
    • Add the cooked zucchini noodles back into the skillet with the shrimp and toss everything together to coat the noodles in the garlic butter sauce.
    • Garnish with fresh parsley and serve immediately.
